So, I embarked on a journey to my pantry to whip up some culinary magic! And if your pantry is lacking seeds, nuts or honey, fear not! Head to the store and grab some unsalted roasted nuts or follow my lead and get your hands on raw organic seeds, nuts and honey at the local farmer's market. Let's turn these ingredients into a delicious masterpiece!
Almond Butter-Honey Protein Bars
Ingredients
½ cup raw cashews
1/4 cup raw pistachios
1/4 cup of dried cranberries
1/4 cup of raw pumpkin seeds
1/4 cup of raw almonds
1/4 cup of raw walnuts
¼ cup of flax seeds
1/4 cup of raw pecans
1/2 cup of raw unfiltered honey
1/4 cup of almond butter
Directions
Line a 4x6 plastic container with parchment paper.
Roast the nuts and seeds on med heat in a pan until light brown in color.
In a small pot on low heat, pour 1/2 cup of honey and 1/4 cup of almond butter and stir. The honey will become a thin liquid with heat.
In a medium size mixing bowl, with a mixing spoon, mix all the nuts, seeds cranberries together with the almond butter and honey until well combined.
Place the nut mix into the parchment paper lined 4x6 container and press it into place. *This step needs to be done quickly while the honey and almond butter is still warm.
6. Place the 4x6 container in the freezer for 1 hour for it to solidify. Once solid, remove the parchment paper from the container and cut into bars.
7. Serve almond butter honey bars cold as they become sticky/gooey when they are thawed out completely. Store in the freezer in an airtight container.
Keep in mind that you have the flexibility to adjust the ingredients in this recipe according to your taste by reducing the amount of nuts, seeds, or honey used. These protein bars provide a deliciously sweet and nutty taste. Recommended daily serving: 1 bar
